To make a batter for deep frying fish, combine 1/2 cup of flour, 3/4 cup of cornstarch, 1 teaspoon of baking powder and 1/4 teaspoon of salt. In a separate bowl, combine 1/2 cup of water with an additional 1 tablespoon of water, 1 tablespoon of vegetable oil and 1 tablespoon of a beaten egg. Thoroughly mix the wet and dry ingredients. The resulting batter is enough for six to eight servings of fish.
For an egg-free batter, combine 1 cup of flour, 1/4 cup of baking powder, 1 teaspoon of salt and 1/2 cup each of milk and water. Mix all of the ingredients in a bowl until smooth. This recipe makes enough batter for about 2 pounds of fish.
For a spicier fried fish, combine one egg, 1 1/2 cups of beer, 1 cup of flour, 1 teaspoon of garlic powder and 1/2 teaspoon each of salt and pepper, and mix thoroughly. In a separate bowl, combine 2 cups of crushed cornflakes and 1 teaspoon of Cajun seasoning. After preparing both sets of ingredients, dip pieces of fish in the first bowl until completely coated. Then dip them into the second bowl, again covering them thoroughly. This recipe is enough for 1 pound of fish.
