To make an egg and sausage casserole, beat 6 eggs and 2 cups milk in a bowl. Add 2 cups cheddar cheese, 1 pound cooked sausage and 8 cups of bread cubes. Pour the mixture into a greased baking dish, and bake at 350 degrees Fahrenheit for 40 minutes.
When your casserole seems done, insert a knife in the middle and make sure it comes out clean to assure it is completely baked. Let the casserole cool for at least 10 minutes before serving. The recipe yields eight to 10 servings.
Some variations on the recipe call for added flavor. If desired, season the egg mixture with 1/2 to 1 teaspoon salt and pepper. Many recipes suggest 1 teaspoon of ground mustard as well. Additionally, some recipes suggest using the bread as a bottom layer rather than mixing it in with the other ingredients. The number of eggs used also varies and depends on the size of the eggs, as well as your preferred egg to sausage ratio.
If time is not an issue, prepare your casserole the night before, cover it and let it sit in the refrigerator for eight hours. Adjust the baking time as needed to compensate for the lower starting temperature of the casserole.
