How Do You Make Egg Casserole in a Crock-Pot?

Egg casserole is a breakfast dish made from eggs, sausage, potatoes, vegetables, milk and seasonings. It is easy to cook overnight in a slow cooker to enjoy the next morning.

Slow Cooker Egg Casserole

This recipe for overnight slow cooker egg casserole takes about 30 minutes of preparation work the night before.

  • 2 12-ounce packages of breakfast sausage
  • 1 red bell pepper
  • 1 cup chopped green onions
  • 1 4-ounce can green chilies
  • 1/4 cup of chopped fresh cilantro
  • 1 30-ounce package shredded hash browns
  • 1 1/2 cups grated cheddar cheese
  • 12 eggs
  • 1 cup milk
  • Salt to taste
  • Ground black pepper to taste
  1. Prepare the vegetables
  2. Chop the bell pepper, green onions and cilantro. If the canned chilies are not already diced, drain and dice them. Mix them together in a bowl and set aside.

  3. Cook the sausage
  4. Cook the sausage and slice it into 1/4-inch pieces.

  5. Prepare the slow cooker
  6. Grease the inside of the slow cooker. Layer the hash browns, sausage, vegetables and cheese in the inside of the slow cooker.

  7. Combine the egg mixture
  8. Mix the eggs, milk and seasoning in a small bowl.

  9. Cook the casserole
  10. Pour the egg mixture onto the mixture in the slow cooker. Cover the slow cooker and cook the casserole on low for 7 to 8 hours.
