To make this easy sweet potato soufflé, you need butter, mashed sweet potatoes, eggs, granulated sugar, vanilla extract, milk, salt, pecans, brown sugar and all-purpose flour. This recipe makes approximately eight servings and takes one hour and 55 minutes to prepare and cook.
To start, preheat the oven to 350 degrees Fahrenheit, and grease a 2 1/2-quart baking dish with butter.
Cook 5 medium-size sweet potatoes on a foil-covered baking sheet for about one hour or until soft. When cool enough to handle, place the potato flesh into a large mixing bowl, and mash until smooth, discarding the skins. Add 2 large eggs, 1 cup of granulated sugar, 1 stick of melted butter, 1 1/2-teaspoons of vanilla, 1/2-cup of milk and a pinch of salt. Using an electric mixer or a hand mixer, mix well, and then add the mixture to the baking dish.
For the topping, combine 1 cup of finely chopped pecans, 1 cup of packed brown sugar, 1/2 cup of all purpose flour and 1/4 cup of softened butter. Spread the mixture evenly over the sweet potatoes. Place the dish in the preheated oven, and bake for approximately 40 minutes or until golden brown. Let the soufflé sit for about five minutes before serving.
