An easy chicken enchilada recipe includes shredded chicken, flour tortillas and a sauce filling made with cream cheese and taco seasoning mix. The enchiladas are heated in a casserole dish with additional sauce spread on top.
Easy Chicken Enchiladas
This simple recipe relies on a pre-packaged taco seasoning mix to provide all of the necessary spicy seasonings for the dish. It takes less than an hour to assemble and cook.

- 8 ounces cream cheese
- 2 tablespoon taco seasoning mix
- 2 tablespoon milk
- 2 teaspoon oil
- 1 small onion, diced
- 3 cups shredded chicken
- 14.5 ounces diced canned tomatoes
- 3/4 cups shredded Mexican cheeses
- 12 flour tortillas
- Preheat oven
- Heat the ingredients
- Fill the tortillas
- Bake the enchiladas
Preheat the oven to 350 degrees Fahrenheit. While warming the oil in a large skillet on medium-high heat, mix the cream cheese, milk and taco seasoning until well stirred.
Dice and place the onion in skillet. Cook for about 5 minutes until tender with brown edges. Add in chicken, tomatoes and 1/2 cup each of the cream cheese mixture and shredded cheese.
Cover a 13 inches by 9 inches casserole dish liberally with a cooking spray. Place approximately 1/3 cup of the filling into each flour tortilla. Roll the tortillas up and place with the seam sides down into the casserole dish.
Spread the remaining cream cheese mixture and shredded cheeses over the tops of the enchiladas. Cover the casserole dish with aluminum foil. Bake in the oven for 20 minutes.
