To make easy candied sweet potatoes, peel six medium sweet potatoes and cut them into 1/2-inch thick slices. Place the sliced sweet potatoes in a shallow casserole dish or iron skillet. Add 1 1/2 cups of water, 1 1/2 cups of light brown sugar and 1/4 teaspoon of salt.
Cover the potatoes and bake at 350 degrees Fahrenheit for 40 minutes. Uncover the dish and continue baking for about 30 minutes until potatoes are tender. This recipe makes six servings.
To make sweet potatoes with marshmallows, place 4 pounds of quartered sweet potatoes in a large pot of boiling water and cook them for about 15 minutes. Drain the potatoes, then cool and peel them.
Combine 1 1/4 cups of margarine, 1 1/4 cups of brown sugar and 2 cups of miniature marshmallows in a large saucepan over medium heat. Add ground cinnamon and ground nutmeg to taste. Cook the mixture, stirring occasionally, until the marshmallows melt. Mash half of the sweet potatoes while breaking the other half into small chunks. Stir the sweet potatoes into the marshmallow mixture until they are coated.
Transfer the potatoes to a greased 9 by 13-inch baking dish and bake the potato mixture at 400 degrees Fahrenheit for 15 minutes. Remove the dish from the oven and cover the top evenly with 1 cup of miniature marshmallows. Continue to bake the potatoes until the marshmallows are golden brown.
