Prep Time: 5 minutes

Cook Time: 25 minutes

Ready In: 30 minutes

Ingredients:

  • 3 cups vegetable or chicken stock
  • 2 cups frozen or fresh broccoli florets, chopped
  • 1 small onion, chopped to make 1 cup
  • 1 15-ounce can evaporated milk
  • 2 cups sharp cheddar cheese, shredded
  • Salt and pepper, if desired
  1. Combine stock, onion and broccoli
  2. In a medium saucepan, stir together stock, onion and broccoli over medium heat. Bring it to a low boil and reduce the heat to medium. Cook for 5 minutes.
