Eagle Brand features several no-bake fudge recipes on its website, EagleBrand.com, including Chocolate Fudge, Foolproof Chocolate Fudge and Marbled Chocolate Fudge. Each recipe takes 10 minutes of preparation time and two hours of chilling time.
To make Eagle Brand's Chocolate Fudge recipe, melt 3 cups of semi-sweet chocolate chips with 1 14-ounce can of sweetened condensed milk or fat-free sweetened condensed milk and a dash of salt in a heavy saucepan over low heat. Remove the pan from the heat, and stir in 1 1/2 teaspoons of vanilla extract. Spread the mixture evenly in an 8- or 9-inch pan lined with waxed paper. Chill for two hours or until firm. Lift the edges of the waxed paper to remove the fudge from the pan. Cut it into squares. Follow the same directions to make the Foolproof Chocolate Fudge, but stir in 1/2 to 1 cup chopped nuts along with the vanilla.
The Marbled Chocolate Fudge also follows the same basic Chocolate Fudge recipe, but it adds a 10-ounce package of deluxe white baking pieces, coarsely chopped. After melting the semi-sweet chocolate chips with the sweetened condensed milk and salt, remove the saucepan from the heat, and stir in the vanilla and the white baking pieces. Stir just until blended before spreading the fudge in the prepared pan.
