Warm Bacon Dressing
This dressing is a zesty delight on a big plate of spinach greens. It makes use of simple ingredients and takes only a few minutes to make. Served warm tossed with spinach with bacon, eggs and onion, it makes a hearty meal or just the first course of dinner.

- 3 tablespoons bacon fat
- 3 tablespoons red wine vinegar
- 1 tablespoon sugar
- 1/2 teaspoon Dijon mustard
- Ground black pepper
Step 1: Cook about eight pieces of bacon to use in the salad and reserve the bacon fat for the salad dressing. Place the bacon fat in a small saucepan on medium heat. Warm until melted.
Step 2: Add in the red wine vinegar, sugar and Dijon mustard. Use a whisk to stir in the ingredients one at a time. Whisk until well-blended. Add salt and black pepper to taste.
Step 3: Pour the warm bacon dressing onto the spinach salad with all the desired toppings and mix well.
