To make crispy potato wedges, slice each potato into six equal wedges, and then dry the wedges with a paper towel. Bake the wedges in the oven at 425 degrees for 30 minutes. Flip the wedges, and then bake them at 350 degrees for 15 minutes.

Slice the potatoes lengthwise into halves, and then slice each potato half lengthwise into thirds.
- Dry the wedges
To remove excess moisture, use a paper towel to dry the sides of each wedge.
- Bake the wedges for 30 minutes at 425 degrees
Place the wedges on a baking sheet lined with parchment paper to prevent sticking. Alternatively, spray the baking sheet with a non-stick spray. Season the wedges with salt and pepper, and then put the baking sheet in the oven. Bake for 30 minutes at 425 degrees.
- Flip the wedges, and bake them for 15 minutes at 350 degrees
Remove the wedges from the oven and flip them. Lower the heat to 350 degrees, and put the wedges back in the oven for 15 minutes. Finally, remove the wedges from the oven. Check to make sure both sides of the wedges are crispy and their contents are warm and soft.
