To make crispy oven-fried chicken, whisk one egg and 1 tablespoon of milk together in a bowl. In another bowl, mix one can of crushed French-fried onions, 1/4 cup dry bread crumbs, 3/4 cup grated Parmesan cheese, 1 teaspoon paprika, 1/2 teaspoon salt and a dash of pepper.
Cut a fryer or broiler chicken into pieces, and dip them into the egg mixture. Roll the chicken through the dry onion mixture to thoroughly coat.
Place the chicken in a greased 13- by 9-inch baking dish. Drizzle the chicken with 1/4 cup melted butter, and bake uncovered for 50 to 60 minutes or until the juices are clear.
Alternatively, combine 1 1/2 cups dried mashed potato flakes, 1 teaspoon seasoned salt, 1/2 teaspoon paprika, 1/4 teaspoon garlic powder and 1/4 teaspoon pepper in a large bowl. Add 1/4 cup melted margarine or butter, and mix well. In another bowl, combine 1 tablespoon water and one egg, and beat well.
Dip pieces from a 3- to 3 1/2-pound frying chicken into the egg mixture, then roll through the potato mixture until completely coated. Optionally, after coating with the egg mixture, put the chicken in a large plastic bag with the potato mixture, and shake the chicken until coated completely.
Using a greased baking dish, bake the chicken at 400 degrees Fahrenheit for 55 to 50 minutes until the chicken flakes with a fork and the juices run clear.
