Make crepes by combining 4 eggs, 1 1/3 cups milk, 2 tablespoons butter, 1 cup all-purpose flour and 2 tablespoons sugar in a bowl and whisking. Sprinkle in a pinch of salt, and pour over a greased frying pan or crepe pan. Heat for approximately two minutes on each side. Serve plain or with various items tucked inside.
It is important to thoroughly mix all the ingredients to avoid any clumps of flour or sugar as well as pockets of unincorporated egg, as these are likely to cause lumps in the crepe and yield an unpleasant taste when eating. After breaking down any clumps, place the pan over medium heat, and apply a light layer of butter or oil to grease the surface. Slowly pour the mixture into the pan until it fully covers the edges, tilting the pan as necessary to ensure that it has an even coating. After a few minutes, flip the crepe to cook on the opposite side.
After removing the crepe from heat, serve it immediately or stuff it with items such as fruits, chocolate, ice cream or whipped cream. If you don't want to stuff it, fold the crepe in half, then into fourths and cover with powdered sugar, fruits or syrup.
