To prepare cream cheese corn casserole, mix butter, cream cheese, corn, green chilies and onions, and bake them in a greased casserole dish at 350 degrees Fahrenheit for 15 minutes. Add French-fried onions and sauteed onions on top, and bake the food an additional 15 minutes.
Prepare the cream cheese corn casserole in a baking dish that is 8 inches wide by 8 inches tall. Add 1 teaspoon of oil to a skillet, and saute 1/2 cup of chopped onions until they are translucent. Next, combine 1/4 cup of softened butter and two 3-ounce packages of cream cheese in a bowl, and stir in 1 can of whole kernel corn, 1 can of creamed corn, 4 ounces of chopped green chiles and the sauteed onions.
Grease the baking dish, and pour in the mixture. Bake the casserole at 350 degrees Fahrenheit for 15 minutes, and remove it from the oven. Stir in half of a package of French-fried onions, and sprinkle the other half on top of the casserole. Bake the food for an additional 15 minutes or until the casserole is heated through.
The green chilies can be omitted for a less-spicy casserole. Other versions of this side dish include jalapeno peppers and sharp cheddar cheese.
