To make Betty Crocker’s cranberry stuffing, melt 1 cup of butter in a saucepan over medium heat and then add 1 1/2 cups chopped celery stalks with their leaves and 3/4 cup of finely chopped onion. Cook until the onion is tender, then stir in 3 cups of soft breadcrumbs. Place the mixture in a large bowl, and add 6 more cups of breadcrumbs, 1/2 cup dried cranberries, 2 tablespoons chopped fresh sage leaves and 1 tablespoon chopped fresh thyme. Add 1/2 teaspoon pepper and 1 1/2 teaspoons of salt. Toss the ingredients to blend them, and place the stuffing in the turkey prior to roasting.
To prepare AllRecipes.com’s cranberry stuffing recipe, make 1/2-inch cubes out of a 1-pound loaf of sourdough bread. In a large bowl, combine the cubed bread with 1 1/2 cups each dried cranberries and golden raisins and 1 cup toasted chopped walnuts. In another bowl, whisk 1/2 cup melted butter with 2 tablespoons brown sugar, and then add 1 teaspoon each ground cinnamon and nutmeg with 1 pinch of salt. Stir the mixture into the breadcrumb mixture, tossing it to distribute, and then spread the stuffing in a lightly greased baking dish. Bake for 45 to 60 minutes in an oven preheated to 350 degrees Fahrenheit.
