Make cranberry bars by beating 2 eggs in a bowl before adding 1 cup of sugar, 1 cup of flour and 1/3 cup of melted butter. Fold in 1 1/4 cups of fresh or frozen cranberries and 1/2 cup of chopped walnuts, and pour the batter into a baking dish. Bake the bars at 350 degrees F for 40 to 45 minutes.
To make another cranberry bar recipe, cook 1 12-ounce package of whole cranberries in a saucepan on medium heat with 1 cup of white sugar and 3/4 cup of water for 15 minutes. Once the mixture thickens and the cranberries soften, allow it to cool. Meanwhile, combine 1 package of yellow cake mix, 3/4 cup of melted butter and 2 eggs in a bowl, and then add 1 cup of rolled oats, 3/4 cup of light brown sugar, 1 teaspoon of ground ginger and 1 teaspoon of ground cinnamon.
Press all but 1 1/2 cups of the flour mixture into the bottom of a baking dish for the crust. Spoon the cranberry mixture over the crust, and crumble the remaining 1 1/2 cups of the flour mixture over the top of the cranberries. Bake the bars at 350 degrees F for 35 to 40 minutes.
