To make cornflake wreath cookies you need ½ cup butter, 1 teaspoon green food coloring and 4 cups of miniature marshmallows. Gather ½ teaspoon vanilla extract, ½ teaspoon almond extract, 4 cups cornflakes cereal and a one packet of cinnamon red-hot candies.
Heat the ½ cup of butter and 4 cups of miniature marshmallows in a large saucepan using a microwave for two minutes, stir the mixture and then heat again for another two minutes until the marshmallows melt. In the absence of a microwave, you can use a double boiler.
After heating the mixture of butter and marshmallows, add the coloring and mix well. Add the almond extract and the cornflakes, and continue stirring gently for about a minute. Drop spoonfuls of the mixture in clumps on a greased wax paper, and use three red hot candies to decorate each of the cookies.
Bake for 10 to 15 minutes. Remove the cookies from the oven, and transfer them to a storage tray. You should grease your fingers before handling the cookies to avoid sticking. Leave the cookies in the storage tray for about two minutes to cool completely before serving them. This recipe makes three dozen cornflake wreath cookies.
