Make a simple and filling salad by combining equal parts corn and black beans with a light lime vinaigrette. To make a salad that serves two, stir together 1 cup of cooked black beans and the kernels of two small cobs of corn. Add 1 tablespoon each of lime juice and olive oil, and toss the salad to combine. Season it with salt and pepper.
This type of salad can be easily altered in many ways. It benefits from the addition of fresh tomatoes. Chop up one large tomato, or cut 1 cup of cherry tomatoes in half.
Add the flesh of one avocado to this salad to give it creamy texture. Cut the flesh into chunks, discarding any brown spots, and add the avocado to the salad just before serving. Shredded cheddar cheese, diced red pepper, chopped cilantro and sliced red onion also make tasty additions.
Another option is to spice up the vinaigrette. Add a few cloves of minced garlic, a splash of red wine vinegar or hot sauce and a pinch of cumin to give the salad bold flavor.
Frozen corn can be substituted for fresh. Either cook the corn before adding it to the beans, or mix the frozen kernels with the beans and let the salad sit for about 15 to 20 minutes to allow the kernels to thaw.
