Make a copycat version of Outback Steakhouse's steak marinade using beer, sugar and seasonings. For the best taste and quality, marinate the steak in the beer for an hour, not overnight.
To make the marinade, pour 1 cup of beer over the steaks in a shallow pan. Place this pan in the refrigerator for one hour and then remove the steaks from the beer. Rub the steaks with a dry rub mix containing 1 tablespoon dark brown sugar, 1 teaspoon of seasoning salt, 1/2 teaspoon pepper, 1/2 teaspoon onion powder and 1/2 teaspoon of garlic powder. Rest the steaks for another 30 minutes or overnight in the refrigerator. Remove the steaks from the refrigerator and grill to the desired temperature.
Alternately, place a steak in 1 cup of a high-quality ale in either a plastic container or a resealable bag for one hour. Combine 2 teaspoons of light brown sugar, 1/2 teaspoon seasoned salt and 1/4 teaspoon of ground black pepper. Remove the steak from its container and rub both sides of the steak with the mixture. Place the steak on wax paper and return to the refrigerator for 30 minutes to one hour. Cook the steak to the desired temperature on a cast iron skillet, grill pan or outdoor grill.
