To make a Cool Whip parfait, mix cream cheese, pudding mix and whipped topping, and layer it with fruit and vanilla wafer cookies inside clear parfait glasses. Top the parfait with additional Cool Whip.
To begin, use an electric mixer to beat one 8-ounce softened cream cheese in a bowl until it is creamy. Gradually beat in 1 1/2 cups of cold milk, and then add 1 3.4-ounce Jell-O vanilla-flavor instant pudding mix. Mix until blended well, and then whisk in 1 cup of Cool Whip whipped topping.
In eight parfait glasses, begin layering the parfait. Start with a layer of coarsely chopped vanilla wafer cookies, layering half of each glass with the wafers. Add 1 1/2 cups mixed sliced fresh strawberries and blueberries, distributed among the glasses. Top with the pudding mixture. Repeat the layers until the glasses are full, and then top each glass with the remaining Cool Whip whipped topping.
As an alternative, prepare pistachio pudding parfaits by processing 6 cups of graham crackers, 2 teaspoons of sugar and 2 tablespoons of melted butter in a food processor. Press the mix into the bottom of six parfait glasses. Mix together 1 3/4 cups of cold milk and 1 3.4-ounce box of instant pistachio pudding mix, and then fold in 1 cup of Cool Whip whipped topping. Spoon the mixture into the glasses. Top with addition whipped topping, and garnish with chopped pistachios.
