Coffee cake is a sweet cake- or bread-like pastry that is popular in many countries and commonly contains nuts, brown sugar, cinnamon, apples or other spices. This particular recipe requires sugar, flour, butter, eggs, walnuts, brown sugar, baking powder, milk, salt and cinnamon.
First, preheat the oven to 350 degrees. Sift together 3 cups of flour, 4 teaspoons of baking powder and 1 teaspoon of salt in a small bowl. In a separate bowl, cream together 12 tablespoons of softened butter and 2 cups of white sugar. In small, alternating increments, mix into the butter and sugar the sifted flour and 1 1/4 cups of whole milk until each has been fully combined. In a third bowl, whip three whole egg whites and add them to the batter. Fold the egg whites into the batter gently. Pour the batter into a pan that's 9 x 13 inches or larger.
In a fourth bowl, cut together with a pastry cutter or fork 12 tablespoons of softened butter, 3/4 cup of brown sugar, 2 tablespoons of cinnamon and 1 1/2 cups of chopped pecans. Once blended, spread the crumbles over the top of the batter. Bake for 40 to 45 minutes, and serve warm.
