Coconut Bread Recipe
This recipe was originally published in "Taste of Home" magazine. It produces around 16 slices of coconut bread.

Turn on the oven to 350 F. Grease a 9x5 loaf pan and set it aside.
Cream the butter and sugar together in a large mixing bowl with an electric mixer. Beat in each of the eggs separately. Add the vanilla to the mixture.
In a separate mixing bowl, blend the flour, baking powder and salt together.
Gradually beat the dry ingredients and milk into the sugar mixture. Alternate small amounts of each until the full amount is blended in to form a batter.
Stir the coconut into the batter.
Add the batter to the prepared loaf pan. Bake the loaf for 1 hour. Remove the coconut bread from the oven when a toothpick inserted into the center of the loaf comes out clean. Let the loaf cool before removing it from the pan and slicing.
