To make cinnamon spiced pecans, mix 2 1/2 cups of pecans and 2 teaspoons of vegetable oil, and cook the mixture at 300 degrees Fahrenheit for 20 minutes. Cook 1 cup of sugar, 1 teaspoon of cinnamon, 3/4 teaspoon of salt and 1/4 cup of water over medium heat. Combine.
Stir together sugar, cinnamon, salt and water until the sugar dissolves. Boil the mixture until a candy thermometer reaches 236 degrees Fahrenheit or the mixture reaches a soft ball stage. This stage occurs when a small amount of the mixture forms a ball when dropped in chilled water. The ball should be soft enough to flatten when pressed. Remove the mixture from the heat, and blend in 1 teaspoon of vanilla extract. Add pecans to the syrup mixture, and stir it until creamy. Turn the spiced pecans out onto waxed paper, and separate them with a fork. Let them cool.
Another way to make cinnamon spiced pecans is to place 1 pound of pecans, 3 tablespoons of melted butter and 4 tablespoons of pure maple syrup in a large bowl. Toss the pecans to coat them. Combine 1 teaspoon of salt, 1 teaspoon of cinnamon and 1 tablespoon of brown sugar in a small bowl. Mix the ingredients together, add them to the pecans, and stir. Spread the spiced pecans onto a flat baking dish, and bake them at 375 degrees Fahrenheit. Stir frequently. Bake for 12 to 15 minutes, or until the pecans are browned. Let them cool.
