Chocolate truffles are made with bittersweet chocolate, heavy cream, vanilla extract and cocoa powder. The ingredients are mixed together and chilled for several hours before being rolled into truffles.
To make one batch of chocolate truffles, you need 9 ounces of finely chopped bittersweet chocolate, 2/3 cup of cream, 1 teaspoon of vanilla extract and 1/2 cup of cocoa powder. Line a baking sheet with foil or wax paper. Heat the cream heated in a small saucepan, and after heating, pour it over the chocolate in a bowl. Whisk the chocolate and cream, then add the vanilla extract. Cover the mixture with a plastic cling wrap, and allow it to cool. Once cooled, refrigerate the mixture for two hours or until it's firm enough to spoon.
Once firm, scoop the mixture using a teaspoon or cookie dough scoop, form it into balls, and place the balls on the baking sheet. Pour the cocoa powder into another bowl, and roll each rounded ball of truffle mixture in the cocoa powder until coated. Truffles can be decorated with other toppings such as chocolate shavings. Truffles should be stored in an airtight container in the refrigerator but allowed to return to room temperature before serving.
