To make a 9-by-5 inch loaf of chocolate chip zucchini bread, combine 3/4 cup of sugar, 3 tablespoons of vegetable oil and two eggs in a mixing bowl. Beat the ingredients together, and pour in one cup of applesauce. Combine the flour with two tablespoons of unsweetened cocoa, a little more than one teaspoon of baking soda, one teaspoon of ground cinnamon, and one-quarter of a teaspoon of salt. Add zucchini and chocolate and bake.
Bake the zucchini bread at 350 degrees Fahrenheit. Line the baking pan with cooking spray before spooning in the mixture. After one hour, poke the chocolate chip zucchini bread with a toothpick. If the toothpick is clean when removed, the bread is ready. Cool the bread in the pan for 10 minutes on a wire rack before removing the bread from a pan.
Add approximately 1 cup of grated zucchini and 1/2 cup of chocolate chips to the recipe. When measuring the flour, level and poke the cups of flour with a knife to properly measure the cups and release air pockets. You can add 1/2 tablespoon of vanilla or orange zest for flavoring. Alternatively, you may add 1/2 cup of pecans for texture. You can serve the chocolate chip zucchini bread with strips of zucchini or whipped cream.
