To make Chinese garlic sauce, stir fry 2 tablespoons of minced garlic in peanut oil in a very hot wok or pan for one minute, add 3 tablespoons of oyster sauce and 1/2 cup of chicken stock, and allow the ingredients to simmer for a few minutes. Vary this recipe by adding grated ginger, if desired.
Chinese kitchens use many variants of garlic sauces and add ingredients such as rice vinegar, coriander and rice wine. Soy or mushroom sauce can be used instead of oyster sauce. Spicy garlic sauce incorporates hot peppers or chili oil and is popular in Sichuan cuisine. In American-Chinese cooking, the garlic sauces used are much less spicy.
Chinese garlic sauce is a typical accompaniment to stir-fries or steamed dishes, such as wantons. Examples of popular dishes with garlic sauce are stir-fried eggplants, pork, shrimp and chicken.
To make chicken with garlic sauce, marinate chicken breast strips in sesame oil and white peppers, and fry them. Briefly stir fry minced garlic cloves, chili and ginger on low heat; add trimmed snow peas and strips of red onion and bell pepper; and stir fry the ingredients on high heat. Add the chicken pieces and then a sauce of rice vinegar, soy, sugar and cornstarch. Cook until the ingredients thicken, and serve them with steamed rice.
