Chinese five-spice powder is a traditional spice blend, which combines the five flavors of the Chinese cuisine: sweet, sour, bitter, pungent and salty. The exact spices used for the blend vary, as do the proportions. The blend can be a base for a rich sauce, in which meat is stewed for a long time. This technique is called "flavor potting."
One of the possible blends of Chinese five-spice powder contains ground anise, black peppercorns, ground cinnamon, ground cloves and fennel seeds.
Put equal measurements of the spices in a pepper mill and grind. Alternatively, use a coffee grinder or a blender. Transfer to an airtight jar.
Chinese five-spice powder can be used to rub on pieces of meat or seafood. Moreover, tofu or vegetables can be used instead of meat. After pressing a block of tofu, cut it into squares and pour a sauce made with vegetable stock, soy sauce, sesame oil, garlic, ginger and the five-spice powder over it. Bake in the oven for 15 minutes.
