How Do I Make Chinese Black Pepper Sauce?

Chinese black pepper sauce is made with black peppercorns, Shaoxing wine, oyster sauce, potato starch, soy sauce and sesame oil. Usually, whole peppercorns are ground into a powder and used fresh for the sauce.

  • 2 tbsp. of black peppercorns
  • 2 tbsp. of oyster sauce
  • 1 tbsp. Shaoxing wine
  • 2 tsp. potato starch
  • 2 tsp. soy sauce
  • 1 tsp. of sesame oil
  • 18 oz. beef fillet
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, sliced

  2. Pour the whole peppercorns into a mortar and crush into a coarse powder with the pestle. Make sure the peppercorns are lightly ground, but don't leave any whole peppercorns.

  4. Combine all of the ingredients in a bowl. Save in the refrigerator until needed, or place sliced beef in with the pepper sauce as a marinade for a couple of hours before cooking. When making peppered beef, pour the sauce into a hot wok with the beef and fry on one side until brown, then flip. Add in bell pepper, onion and garlic. Fry the vegetables until onions are cooked through.
