Chicken spaghetti is a baked casserole made by cooking 2-inch pieces of spaghetti in boiling chicken broth. Drain the spaghetti, and combine it with cream of mushroom soup, pimentos, green pepper, diced onion and chicken broth. Top it with grated cheese, and bake it at 350 F for 45 minutes.
Make homemade broth by cutting up a fried or roasted chicken and placing it in a large pot. Cover the chicken with water, and bring it to a boil. Let the chicken simmer for 45 minutes before removing it and setting it aside to cool. Reserve 2 cups of broth to add to the casserole later. Add the spaghetti pieces to the pot, and cook according to the package instructions. Once the chicken is cool, cut it into bite-sized pieces to add to the cooked spaghetti.
Make a spicy variation by combining 1 can of cream of chicken soup, 1/3 cup of milk, 1 can of mushrooms, 10 ounces of diced tomatoes with chili peppers and 3/4 pound of cheese in a saucepan. Heat and stir the mixture until everything is combined and the cheese melts. In a separate skillet, cook 1 pound of chicken breast over medium-high heat for approximately 10 minutes. Slice the chicken into bite-sized pieces, and combine it with cooked spaghetti and the cheese mixture in a baking dish. Bake it for 30 minutes until bubbly.
