Begin making a chicken potpie with puff pastry by preheating the oven to 400 degrees Fahrenheit. The recipe involves preparing a filling that has chicken, vegetable and gravy, and topping it with layers of puff pastry.
Using a 10-inch skillet, heat 1 tablespoon of olive oil. Add two large, coarsely chopped onions that amount to approximately 2 cups, and one clove-minced garlic. Saute the onions and garlic. Substitute 1/8 teaspoon of garlic powder for the fresh garlic, if desired. Continue stirring and cooking until the onions and garlic are tender.
Add one 12-ounce jar of chicken gravy and one 9-ounce package of frozen mixed vegetables, such as carrots, green beans and peas. Also add 2 cups of chopped cooked chicken, and stir until all ingredients are thoroughly combined. Heat the mixture until it bubbles.
Put the chicken mixture into a 9-inch deep-dish pie plate. Use half of a 17.3-ounce package of puff pastry. Open the sheet of pastry and lay it on top of the pie plate. Using a fork, crimp the edges of the pastry to seal it to the dish. Along the way, trim any extra pastry. Put the food into the oven for about 25 minutes. When it is done, the pastry should be golden brown.
