To make chicken fried steak, dredge tenderized beef bottom round portions in eggs and flour. Then cook them in oil over medium high heat until the meat is fully browned.
To make chicken fried steak, cut 2 pounds of beef bottom round into 1/2 inch thick slices, and season each piece with salt and pepper. Place 1 cup of flour into one pie pan and three beaten eggs into another. Dredge each piece of meat in the flour once, then tenderize it until it is about 1/4 inch thick. Dredge the meat in the flour again, followed by the eggs, and then the flour. Repeat this process with all of the meat pieces, then allow them to sit for approximately 10 to 15 minutes before cooking them.
Heat enough oil to cover the bottom of a 12-inch skillet over medium-high heat. Add the meat in batches so that the pan does not become too crowded. Cook each piece for approximately 4 minutes per side or until browned. Remove the meat to a wire rack on top of a baking pan in a 250 degree Fahrenheit oven. Repeat this process until all the meat has been browned.
To make the gravy, add 1 teaspoon of vegetable oil to the skillet and whisk in 3 tablespoons of flour, then 2 cups of chicken broth. Whisk until the gravy boils. Add 1/2 cup of whole milk and seasonings to taste, and whisk until the gravy has thickened.
