To make chewy granola bars, add 2 1/2 cups of toasted oats, 1/4 cup of melted unsalted butter, 1/3 cup of honey and 1/4 cup of packed brown sugar into a large mixing bowl and stir. Transfer the mixture to a lined pan and firmly press before cutting bars and refrigerating for at least two hours. This recipe yields approximately 12 chewy granola bars.
Bake oats and nuts for five minutes before stirring and heating an additional 3 to 5 minutes. As the base recipe only requires oats, butter, honey and brown sugar, optional ingredients include 1/4 teaspoon of kosher salt, 1/2 teaspoon of vanilla extract, 1/2 cup of dried cranberries and approximately 1/4 cup of mini chocolate chips. When melting butter, use a small saucepan on medium heat and add the brown sugar, honey, vanilla extract and salt. While this mixture aids in holding the granola bar together, the pressing process is also important and keeps the granola bars from coming undone.
You can also add chocolate chips or your topping of choice into the mixture, such as dried cranberries or raisins. Once shaped, cover the granola bars with aluminum foil and refrigerate. The granola bars last up to a week when stored.
