First, gather ingredients for the cherry yum yum. The recipe requires 2 cups graham cracker crumbs, 3/4 cup unsalted butter, 3/4 cup powdered sugar, 8 ounces cream cheese and 1 cup sugar. It also takes 1 teaspoon vanilla, 16 ounces Cool Whip and 16 ounces cherry pie filling.
Before starting the dish, melt the butter, and allow the cream cheese to soften at room temperature. Keep the Cool Whip refrigerated until ready to use.
Combine 2 cups graham cracker crumbs with 3/4 cups melted butter and 3/4 cup powdered sugar. Pour half of this crumb mixture into the bottom of a 9-by-5 glass dish.
Mix together softened cream cheese, sugar and vanilla until smooth. Add the Cool Whip to the cream cheese mixture. Fold gently to incorporate the ingredients without breaking the Cool Whip. Spread 1/2 the cream cheese mixture on top of the crumb base. Top this layer with the cherry pie filling. Cover pie filling with remaining cream cheese mixture. Sprinkle remaining crumb mixture on top of cream cheese mixture.
Refrigerate the cherry yum yum overnight before serving.
