Cherry pies can either be made with a sweet or sour cherry variety; the recipe shown here can be completed in under 2 hours. This cherry pie recipe makes use of Bing cherries, instead of sour cherries, which gives the pie a generally sweet taste.
Sweet Cherry Pie Recipe
The pie dough for this recipe must be prepared and be on the ready before proceeding with making the cherry pie.

- 2 lbs. Bing cherries, pitted and halved
- Basic pie dough
- 1 large egg yolk, beaten and mixed with a bit of water
- 1/2 cup granulated sugar and a bit more for sprinkling
- 2 tablespoons cornstarch
- 2 tablespoons fresh lemon juice
- All-purpose flour
- Prepare the oven and dough
- Add the cherry filling
Preheat the oven to 400 degrees Fahrenheit. Roll the dough to a 14-inch round then roll the dough around the rolling pin. Roll the dough on a 9-inch pie plate and then push the dough snugly into the bottom corners of the plate. Cut the dough with a 1-inch overhang around the plate.
Mix the cherries, sugar, cornstarch and lemon juice in a large bowl and toss until the cherries are all coated. Pour the cherry filling into the pie dough. Roll the remaining dough and then cut into 1/2 inch strips. Cover the pie with the strips using a lattice pattern then crimp the edges of the pie to seal it.
Brush the lattice with the egg wash, then sprinkle with some granulated sugar. Bake for 60 to 70 minutes. Let it cool for at least 3 hours before serving.
