Make cheese grits casserole by cooking grits with milk, combining them with eggs and cheese and baking them in the oven. Another recipe calls for combing this mixture with cooked pork sausage.
To make cheese grits casserole, pour 4 cups of milk in a saucepan, and bring it to a boil over medium-high heat. Mix in 1/4 cup of butter and 1 cup of uncooked quick-cooking grits, and then simmer the mixture for 7 minutes, stirring often to prevent the grits from sticking to the bottom of the saucepan. Once the grits are cooked through, remove the saucepan from the heat, and stir in 1 lightly beaten egg, 1 teaspoon of salt, 1/2 teaspoon of pepper and 2 cups of shredded sharp cheddar cheese. Spoon the mixture into a greased baking casserole dish, and top it with 1/4 cup of grated Parmesan cheese. Bake the casserole covered at 350 degrees Fahrenheit for 40 minutes.
Another recipe substitutes the milk for 6 cups of water, and then suggests that it be brought to a boil. Stir 2 cups of uncooked grits into the boiling water, and cook until the liquid is almost completely cooked out, and then add 1/4 cup of butter and 2 cups of shredded cheddar cheese. Cook 1 pound of ground pork sausage in a skillet until it browns, and lightly scramble 12 eggs in 1/2 cup of milk. Combine the sausage, egg mixture and grits in a baking dish, and top the casserole with 1/4 cup of butter and 1 cup of shredded cheddar cheese. Bake the grits at 350 degrees Fahrenheit for 30 minutes.
