To make cheese bars with pumpkin cream, blend sugar, brown sugar and butter in a bowl until the mixture is crumbly. Save 1 cup of the mixture for the topping, pressing the remaining mixture into the bottom of a pan. Pour cream cheese pumpkin mix onto the crust, and bake.
Preheat the oven to 350 degrees Fahrenheit. Mix between 1 and 2 cups of flour into a small bowl with 1/4 cup sugar and brown sugar. Gradually add cubed butter, and stir until the ingredients resemble crumbs. Mix in 1 cup oats and 1/2 cup pecans. Save 1 cup of the mixture for the topping, and press the rest into the bottom of a greased pan. Bake the crust for 15 minutes.
In a small bowl, combine 8 ounces cream cheese with 2 teaspoons cinnamon, 1 teaspoon cardamom and 1/2 cup sugar. Blend until the mixture is smooth. Add 1 15-ounce can of pumpkin, 1 teaspoon vanilla and 3 lightly beaten eggs. Pour the cream cheese mixture onto the warm crust, and top it with the remaining cup of crust mix.
Allow 20 to 25 minutes for baking. Test the bars by inserting a knife in the center to see if it comes up clean. Once cooled, cut into bars, and serve within two hours of baking.
