To make cheese balls for a party, use a mixer to blend two 8-ounce packages of cream cheese with one 8-ounce package of shredded sharp cheddar cheese. Add 1 tablespoon of chopped onions, 1 tablespoon of chopped red bell peppers, 2 teaspoons of Worcestershire sauce, 1 teaspoon of lemon juice and a pinch of cayenne. Refrigerate the mixture for several hours, and then roll it into 2-tablespoon balls. Roll each ball into chopped roasted pecans, and serve with crackers.
There are many variations to making cheese balls, including using different types of cheese, such as goat cheese, or rolling in different types of nuts, such as almonds. Two different recipes are ranch and onion cheese balls and Southwestern bacon jalapeño cheese balls.
For the ranch onion cheese balls, blend two 8-ounce packages of cream cheese with 1 packet of ranch dressing mix. Add in three or four sliced green onions. Shape the mixture into balls and roll in buttery crackers.
To make the Southwestern bacon jalapeño cheese balls, mix 8 ounces of cream cheese with 1/2 cup of shredded sharp cheddar, 2 tablespoons of cilantro, one clove of minced garlic, 1/2 teaspoon of cumin, 1/8 teaspoon of cayenne, 1 teaspoon lime juice, 1/2 teaspoon of Worcestershire sauce, three pieces of crumbled cooked bacon and one diced jalapeño. Shape the mixture into balls, and refrigerate for 30 minutes. Roll each ball in a mixture of one diced jalapeño, 1/4 cup of chopped roasted pecans and three pieces of crumbled cooked bacon. Refrigerate for one hour before serving.
