Cauliflower can make a tasty and healthy substitute for rice or couscous. To make cauliflower rice, use the following steps.

- 1 head cauliflower
- 1 tablespoon olive oil or butter
- Prepare the cauliflower
- Chop the cauliflower into granules
- Remove larger pieces
- Cook the cauliflower
To get started, take one head of cauliflower and chop the florets off of the inner core. Using the hands, break the large florets into slightly smaller pieces.
Put the cauliflower florets in a food processor and pulse it into small granules. To make granules in a grater, use the large holes of a box grater to process the cauliflower.
If any larger pieces remain in the granules, remove them and put them back in the food processor.
To cook the cauliflower, put a large skillet on the stove on medium heat. Heat up some butter or olive oil and add the cauliflower granules. Cook the cauliflower for 5 to 8 minutes until it softens. Use the cauliflower in place of cooked rice or couscous in a variety of different recipes.
