To make caramelized sweet potatoes, heat 3 tablespoons of olive oil in a skillet. Peel 2 pounds of sweet potatoes, chop them, and cook them in a skillet for three minutes. Add 2 1/2 tablespoons garlic, cook everything for one minute, pour in 3/4 cup of dry white wine and 1 1/2 cups of chicken stock, and cook potatoes for 20 minutes. Stir in 2 tablespoons of dark-brown sugar and 1 teaspoon of salt, and cook for 20 minutes.
Alternatively, make candied sweet potatoes by boiling 2 chopped sweet potatoes or cooking them whole in at 350 F until they are soft. Place 1/4 cup of butter and 1/2 cup of packed brown sugar into a skillet, and cook the mixture until it starts bubbling. Pour in 1/4 cup of orange juice, and stir the mixture until it is well-combined. Chop up sweet potatoes if they are still whole, add them to the juice mixture, and cook them on low for about 20 minutes.
Another option is to cook 2 pounds sweet potatoes until they are tender, peel the skin off, cut up the potatoes, and transfer them to a baking dish. Mix 1/4 cup of butter, 1/4 cup of maple syrup, 1/3 cup of packed brown sugar and 1/4 teaspoon of cinnamon in a pan, heat the mixture up until it starts boiling, add it to the baking dish with potatoes, and bake everything for 40 minutes at 350 F.
