Make caramel apple cookies using prepared sugar cookie with a few additional ingredients. Using the refrigerated dough eliminates most of the measuring and time to prepare these treats.
Preheat the oven to 350 degrees Fahrenheit. Crumble a 16.5-ounce tube of sugar cookie dough into a large bowl. Peel, core and chop one medium-sized apple. Add the apple, 1/4 cup of all-purpose flour and 1/2 teaspoon of apple pie spice to the bowl with the cookie dough. Knead the dough to combine all the ingredients.
Drop the cookie dough on an ungreased cookie sheet, leaving plenty of room for the cookies to expand without touching. Place the cookie sheet in the oven and bake 14 to 16 minutes, until the edges are light brown. Remove the cookies from the oven and cool them for one minute. Transfer them to a cooling rack and allow them to cool for another 20 minutes. Repeat the process until you cook all the dough.
Unwrap 24 caramels and place them in a small microwavable bowl. Add 2 tablespoons of half-and-half. Heat the caramels for 30 to 60 seconds, pausing to stir once, until they melt. Drizzle the melted caramel over the cookies and sprinkle them with chopped pecans. Cover the cookies, and store them in the refrigerator.
