Make cake on a stick, also known as cake pops, by mixing pre-baked cake with frosting to form balls, chilling the balls on a wax paper-lined sheet pan, inserting lollipop sticks into the cake balls and dipping the cake balls into melted chocolate. Preheat the oven to 350 degrees Fahrenheit, and grease and flour a 13-by-9-inch baking pan. Prepare a package of chocolate cake mix according to package instructions, then crumble the cake into a large bowl. Soften 1/2 of a container of chocolate frosting for 10-15 seconds in the microwave, then add it to the crumbled cake, and mix by hand to combine. Add more frosting if necessary to form smooth balls.
Shape the mixture into 50 small balls, and set on a sheet pan lined with wax paper. Set in a refrigerator to chill for up to 20 minutes. In a microwave-safe bowl, melt 32 ounces of white chocolate with 2 teaspoons of shortening or oil in a microwave for one minute. Stir and microwave again for 30 seconds, stirring and repeating until fully melted. Divide the chocolate into two bowls, and color one with food coloring.
Dip the tips of lollipop sticks into the melted chocolate, then insert them into the center of the cake balls. Chill the pops for a few minutes to bind the balls to the sticks. Dip the cake balls into the melted white or blue chocolate, and allow to harden before serving. Top with more melted white chocolate, finely chopped toasted coconut and nuts.
