Bubble tea, a drink that first became popular in Taiwan in the 1980s, is made by combining brewed tea, milk, sugar and tapioca beads, also known as boba. You can also add condensed milk or honey as a sweetener and fruit juice or nectar as flavor infusers. Boba, or dried tapioca pearls, can be purchased online or at Asian grocery stores. Boil 7 cups of water in a large pot. When the water comes to a boil, add 1 cup of tapioca pearls. Cover the pot, and boil the boba for 15 minutes. Turn the heat off, and let the boba sit in the hot water for another 15 minutes. Rinse the beads in warm water, and drain.
Brew 1 cup of a strong black tea, such as orange pekoe. Let it cool slightly. Crush 1 cup of ice in a blender.
Add the tea, one scoop of sugar and 1 cup of milk to a cocktail shaker. Shake it vigorously so that all the ingredients combine. Add the ice, and shake again. Put the boba pearls in a tall glass. Pour the sweet tea over it. Refrigerate any excess tea or boba.
