Broccoli raisin salad consists of broccoli, bacon, onion, raisins and a few other ingredients. This recipe serves 12 people and takes a total of one hour and 25 minutes to prepare with 15 minutes of prep time and 10 minutes of cooking time.
To make the broccoli raisin salad, place 1 pound of bacon in a large skillet and cook over medium-high heat until evenly cooked or about 10 minutes. Drain the slices of bacon on paper towels, then cool and chop into tiny pieces. Next, combine 6 cups of chopped broccoli, bacon, 1 cup of raisins, and 1 small, finely chopped red onion in a bowl.
To make the dressing, whisk 1 cup of mayonnaise, 1/2 cup of white sugar and 2 tablespoons of white vinegar together in a small bowl. Stir the dressing into the broccoli mixture until it is evenly coated. Cover the bowl, and place it in the refrigerator for an hour to let the flavors combine. Sprinkle with 3 ounces of sunflower seeds before serving.
For a lower-sugar salad, substitute Splenda for the sugar, or reduce the amount of sugar to 1/4 cup. You can also omit the bacon if you desire a healthier salad.
