An easy brie cheese appetizer recipe using only three ingredients can be made by using a package of mini shells, 15-1/2 inch cubes of brie cheese and some apricot preserves. This recipe yields 15 servings.
Preheat oven to 350 degrees Fahrenheit. Place the mini shells on a baking sheet. Cut brie into 1/2 inch cubes and put 1 cube into each mini shell. Spoon approximately 1/2 teaspoon of apricot preserves on top. Bake for seven minutes, or until brie cheese has just melted.
To make a different simple savory brie cheese appetizer that yields 12 servings, thaw a frozen pastry sheet. Cut puff pastry sheet into 12 even squares. Spray a muffin tin with non stick cooking spray and carefully place a square of puff pastry sheet in each mold, shaping the dough to form a cup. Bake at 400 degrees Fahrenheit for 10 minutes until puffed up and light golden brown.
Cut 1/2 of a small onion into thin slices. Saute onion in small saucepan with 1/2 tablespoon of butter over low heat for about 15 minutes until light golden brown, stirring occasionally. Set aside. Cut 12 slices of brie cheese and place one in each pastry cup. Place the pastry cups in the oven and bake for five minutes more until cheese is melted. Top with caramelized onion. Garnish with a pinch of chopped green onion and freshly cracked black pepper.
