Bake a casserole for breakfast using eggs, cheese, vegetables, meat, milk and packaged pancake mix. Prepare it the evening before and refrigerate overnight before baking it in the morning or make it all in one go.
- Gather ingredients
Take four eggs, cheddar cheese, half a yellow onion, one bell pepper, some sausage or bacon, and a packaged pancake mix. Feel free to substitute different vegetables in place of the bell pepper if you prefer.
- Prepare ingredients
Chop the half onion and the other vegetables. Cut the bacon or sausage into 1-inch pieces. Shred 2 cups of Cheddar cheese or use pre-shredded cheese. Blend the eggs, milk and pancake mix in a bowl until smooth. Add a dash of pepper. Grease a 9-by-12-inch rectangular baking dish with cooking spray or butter. Set the oven to 400 degrees Fahrenheit.
- Sauté ingredients
Lightly cover a skillet with cooking spray, olive oil or butter. Place it over medium heat. Add the onion, vegetables and meat. Let the mixture cook for at least 10 minutes.
- Combine ingredients
Spread the cooked mixture across the bottom of the greased dish. Pour the blended egg mixture evenly over the top. Sprinkle shredded Cheddar cheese over the dish.
- Bake the casserole
Bake the casserole, uncovered, on the center rack for 45 minutes either immediately or after refrigerating the mixture overnight. Make sure it is cooked by inserting a knife or toothpick into the middle; if it comes out clean, the casserole is ready. Let the dish sit for 5 minutes to set, then cut into pieces and serve.
