- 1 1/2 cups all-purpose flour
- 1 tsp., salt
- 1 tsp., baking powder
- 1/8 tsp., ground cinnamon
- 1 cup fresh or frozen blueberries
- 1 cup sugar
- 1/2 cup milk
- 1/3 cup melted butter
- 2 large eggs
- 1 tsp., lemon zest
- 2 tbsp., lemon juice
- Combine dry ingredients and berries
- Combine sugar and wet ingredients
Heat oven to 350 degrees Fahrenheit and combine the flour, salt, baking powder and cinnamon. Then, add the blueberries and stir.
Whisk the sugar together with the milk, butter, eggs, lemon zest and lemon juice. Stir into the flour and blueberries.
Grease a 8 1/2-inch by 4 1/2-inch loaf pan and fill with the mixture. Bake in the oven for around 1 hour, or until an inserted toothpick can be pulled out clean. Cool at room temperature for an hour before serving.
