To make Bisquick cheddar biscuits, combine 2 cups Bisquick mix with 2/3 cup milk and 1/2 cup shredded cheddar cheese to form a soft dough. Drop the dough by the spoonful onto a baking sheet. Bake the biscuits for eight to 10 minutes at 450 F until golden brown.
You can make a variety of cheddar biscuits by adding additional ingredients into the dough, or brushing the finished biscuits with flavored butter. To make Parmesan, garlic and rosemary biscuits, for example, omit the cheddar cheese and add 3 ounces of Parmesan and 1 clove of garlic. After baking, brush the biscuits with melted butter mixed with sautéed garlic and chopped rosemary. To make three-cheese biscuits, add 1/4 cup each of cheddar cheese, colby jack and mozzarella or Asiago cheese.
You can also make cheesy biscuit bombs with Bisquick, which are stuffed with cheese. To make them, mix 2 1/4 cups Bisquick mix with 2/3 cup milk until a soft dough form. Place the dough on a floured surface and roll it out to a 1/2-inch thickness. Using a biscuit cutter, cut uniform biscuits from the dough that are at least 2 1/2 inches in diameter. Top each biscuit with two or three chunks of mozzarella or cheddar cheese. Pull the edges of the biscuit dough around the cheese and seal. Brush them with olive oil, and place them seam-side down the baking sheet. Bake for 15 to 20 minutes at 350 F. Serve them hot.
