Make beef and bean burritos by cooking beef with onions, spices and tomato sauce and wrapping the filling in tortillas. Top the burritos with enchilada sauce and grated cheese before serving them.
Saute 1 diced onion over medium heat, and then stir in 2 pounds of ground beef once the onion softens. Once the meat browns, add 1/2 teaspoon of ground cumin, 1/4 teaspoon of chili powder, 1/4 teaspoon of oregano and 1/4 teaspoon of salt, and stir in 2 7-ounce cans of Mexican tomato sauce or enchilada sauce. In a separate pan, melt 3/4 cup of grated cheddar cheese with a 28-ounce can of refried beans. Spoon the meat mixture and bean mixture into 12 large flour tortillas, and place the burritos in a baking dish. Pour a 7-ounce can of enchilada sauce and more grated cheddar cheese over the burritos before serving, and garnish them 1/2 cup of fresh cilantro leaves.
Another recipe calls for 1 minced garlic clove added to the onion and meat mixture. Instead of adding cheese to the can of refried beans, mix them with 1/2 cup of enchilada sauce. Serve the burritos on a bed of shredded lettuce, and garnish them chopped tomatoes, sliced olives, sour cream or guacamole.
