To make BBQ sauce, combine ingredients such as 1/2 cup water, 5 cups tomato sauce, 1/4 to 1 cup vinegar, 1/4 cup Worcestershire sauce, sweetener, 1 1/2 teaspoons red peppers and 7 1/2 teaspoons chili powder in a saucepan and simmer for one hour. Strain, cool and store the sauce.
Some other ingredients that can be added to make the BBQ sauce are 1/8 teaspoon cayenne pepper, 1/2 teaspoon cumin powder and 2 teaspoons liquid smoke. Add molasses, spicy brown mustard, onions and garlic to make the sauce more flavorful. Use tarragon or apple cider vinegar.
Use 1/4 cup honey, 1 1/2 cups sugar or brown sugar as the sweetener. Add more sweetener to make a sweeter sauce, more chili or pepper for a spicier sauce, and more liquid smoke for a smokier flavor. Add 2 to 3 tablespoons of whiskey to give the sauce a deeper flavor.
To make the BBQ sauce, whisk all the ingredients in a saucepan over medium heat continuously. Allow the mixture to boil fully but in a controlled manner. When the sauce begins to boil, lower the heat so that the mixture simmers. Stir occasionally to prevent the sauce from spattering out.
Cook the sauce uncovered until the mixture thickens. This may take 30 minutes to an hour. Then strain the sauce and allow it to cool. As the sauce cools, it thickens further. Store in a glass jar with an airtight lid in a refrigerator for approximately two weeks.
