Baked sauerkraut balls are made by combining sausage, sauerkraut, breadcrumbs, onions, cream cheese and herbs. They are then baked at 375 degrees Fahrenheit until lightly browned.
To make baked sauerkraut balls, cook 1/2 pound of sausage and 1/4 cup finely chopped onions before draining and adding one 14-ounce can of drained sauerkraut and 2 tablespoons of bread crumbs. In a separate bowl, mix 3 ounces of cream cheese, 2 tablespoons of parsley, 1/4 teaspoon of garlic salt, 1 teaspoon of mustard and 1/4 teaspoon of pepper. Combine with the sauerkraut, sausage and onion mixture, and place in the refrigerator until firm.
Form the mixture into small balls, and dip them in a mixture made from 2 well-beaten eggs and 1/2 cup of milk. Blend 1/4 cup of all-purpose flour and 1 cup of bread crumbs. Then, coat the balls with this mixture. Place on a greased baking pan, and bake uncovered at 375 degrees Fahrenheit for 15 to 20 minutes.
A few drops of hot pepper sauce can be added to the sauerkraut mix for a spicier result. More or less sauerkraut can be used to taste, and the drained sauerkraut water can be added to create moister and more flavorful balls. Serve with sweet and sour sauce, mustard or barbecue sauce for dipping.
