Make a baked potato casserole using pre-baked potatoes, chicken soup, sour cream, cheddar cheese, butter and potato chips. The ingredients are combined and baked for approximately one hour.
Start the casserole by baking six potatoes for an eight-serving casserole or more for a larger casserole. Bake until tender. Cool the potatoes, and then shred them with a hand grater or food processor.
Next, grate 2 cups of cheddar or other hard cheese. Set the cheese side, and continue to assemble ingredients.
Crush 2 cups of plain potato chips. Use flavored chips, such as sour cream and onion, to add extra taste to the casserole. Set crushed chips aside.
Open two cans of cream of chicken soup and combine with 8 ounces of sour cream. Cube 1/2 cup butter and set aside.
Preheat the oven to 350 degrees Fahrenheit. Lightly spray the bottom of an appropriately sized baking pan. Use a 9-by-13-inch pan for a six-potato recipe. Larger pans create thin casseroles, while smaller baking pans create thicker casseroles.
After all ingredients are gathered, the pan is lightly sprayed and the oven is preheated, start assembling the casserole. First, spread the shredded potatoes in the bottom of the pan. Next, pour the chicken soup/sour cream mixture over the potatoes.
Spread the shredded cheese over the mixture. Next, add the cubed butter, ensuring it is distributed evenly across the ingredients. Sprinkle the crushed potato chips over the casserole. Place the casserole in the oven, and bake it for approximately one hour.
